  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 whole large egg
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 teaspoon almond extract, or vanilla extract
  • 1 3/4 cup chopped strawberries
  • 2 tablespoons all-purpose flour
  • 1 cup powdered sugar
  • 1/2 teaspoon almond extract, or vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350º F and grease an 8×4 inch loaf pan.
  2. In a mixing bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, egg, vegetable oil, milk, and almond extract until well blended.
  4. Combine the dry flour mixture with the wet mixture, stirring until no dry streaks remain.
  5. Coat the chopped strawberries with 2 tablespoons of flour and fold them into the batter gently.
  6. Transfer the batter into the prepared loaf pan and bake for 55-65 minutes, or until a tester inserted comes out clean.
  7. Let it cool for about 10 minutes before transferring to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar, almond extract, and milk until you reach a pourable consistency, adjusting as necessary.
  9. Once the bread is cooled, pour the glaze on top.
