- 1 pound chicken apple sausage sliced
- 1/2 large onion chopped
- 2 cloves garlic minced
- 1 granny smith apple chopped
- 2 cups chicken broth
- 1 can (14.5 oz) tomatoes with green chilies
- 1/2 cup heavy cream
- 10 ounces pasta (I used cellentani)
- salt and pepper to taste
- 1 cup monterey jack cheese shredded
- 1/4 cup green onions sliced thinly for garnish
Instructions
- In a large oven-safe pan or skillet, heat the olive oil over medium-high heat. Add the chopped onion and sliced sausage, cooking for about 5 minutes until browned. Stir in the minced garlic and chopped apple, cooking for an additional minute.
- Pour in the chicken broth, canned tomatoes, heavy cream, pasta, salt, and pepper. Stir the mixture, bringing it to a boil, then reduce the heat to medium-low. Cover and let it simmer until the pasta is al dente.
- Remove the pan from heat and mix in 1/2 cup of shredded cheese. Stir well to incorporate, then sprinkle the remaining cheese on top. Broil in the oven until the cheese is melted and bubbly.
- Serve the pasta garnished with sliced green onions and enjoy!
