This Zucchini Frittata is a delightful blend of fresh zucchini, eggs, and a trio of flavorful cheeses. Perfect for a quick dinner or a hearty brunch, it offers a scrumptious taste that everyone will love, making meals both satisfying and healthy.

Ingredients

  • 2 cups small diced zucchini pieces
  • 1 t olive oil
  • 1 tsp. italian herb blend
  • 1 tsp. spike seasoning
  • 8 eggs, well beaten
  • 1/2 cup grated mozzarella
  • 1/2 cup crumbled feta cheese
  • 2 t + 1/4 cup coarsely grated parmesan cheese
  • salt and fresh ground pepper to taste
  • sour cream for serving, optional but good

Instructions

  1. Cut the zucchini into fourths lengthwise and scoop out the seeds, leaving about 1/2 inch of flesh intact.
  2. Chop each piece into strips slightly over 1/2 inch wide and then into squares to yield about 2 cups.
  3. Heat olive oil in a heavy non-stick or oven-safe frying pan.
  4. Add the zucchini pieces, season with Italian herb blend and Spike seasoning, salt, and pepper. Cook over high heat, stirring frequently, until browned, about 6 minutes.
  5. While the zucchini cooks, beat the eggs and prepare the cheeses.
  6. Lower the heat and sprinkle the cheeses over the zucchini, allowing them to melt for a minute or two.
  7. Preheat the broiler.
  8. Gently stir in the beaten eggs, scraping the sides of the pan.
  9. Cover the pan and cook on low until the frittata is barely firm and slightly wet-looking, about 10-12 minutes.
  10. Before broiling, sprinkle the remaining Parmesan on top of the frittata.
  11. Broil the frittata about 6 inches from the heat until golden and bubbly, watching carefully as it only takes 2-3 minutes.
  12. Serve hot, optionally with sour cream.
