Ingredients

  • 2 cups (350 g) plain greek yogurt
  • 12 tbsp honey or maple syrup (optional)
  • ½ tsp vanilla extract
  • ½ cup (125 ml) strawberry compote (or other fruit compote)
  • 1 cup (160 g) homemade granola
  • fresh berries or fruit, for garnish
  • fresh mint leaves, for garnish

Instructions

  1. In a bowl, mix the yogurt with honey (if desired) and vanilla extract until well combined.
  2. Spoon a layer of yogurt into 4 glasses or jars, then add a layer of strawberry compote and a layer of granola. Repeat these layers until the glasses are filled.
  3. Top each parfait with fresh berries or fruit and a sprig of mint for decoration.
  4. Serve immediately or cover and chill for 30 – 60 minutes before enjoying.
