Ingredients

- 2 cups (350 g) plain greek yogurt
- 1–2 tbsp honey or maple syrup (optional)
- ½ tsp vanilla extract
- ½ cup (125 ml) strawberry compote (or other fruit compote)
- 1 cup (160 g) homemade granola
- fresh berries or fruit, for garnish
- fresh mint leaves, for garnish
Instructions
- In a bowl, mix the yogurt with honey (if desired) and vanilla extract until well combined.
- Spoon a layer of yogurt into 4 glasses or jars, then add a layer of strawberry compote and a layer of granola. Repeat these layers until the glasses are filled.
- Top each parfait with fresh berries or fruit and a sprig of mint for decoration.
- Serve immediately or cover and chill for 30 – 60 minutes before enjoying.
