  • ¾ cup unsalted butter (168 grams), softened
  • 1¾ cups granulated sugar (350 grams)
  • 1 tablespoon vanilla extract
  • ¼ cup vegetable oil (60 ml)
  • 4 large eggs, room temperature
  • ¼ cup sour cream (60 ml), room temperature
  • 1 cup whole milk (260 ml), 2% is ok, but not ideal – do not use skim
  • 1 cup unsalted butter (226 grams), softened, but not starting to melt
  • â…” cup cocoa powder (57 grams), sifted
  • 34 cups powdered sugar (330440 grams), sifted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 35 ml whipping cream (4575 ml), milk is ok

Instructions

  1. Preheat the oven to 350℉ (180℃) and lightly grease the cake pan.
  2. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Whisk for about 30 seconds and set aside.
  3. Cream the butter and granulated sugar until fluffy, approximately 2-4 minutes.
  4. Beat in the vegetable oil and vanilla extract into the butter mixture. Scrape the bowl as needed.
  5. Add the eggs one at a time, mixing well and scraping the bowl after each addition.
  6. Incorporate the sour cream into the mixture.
  7. Alternate mixing the dry ingredients and milk into the batter, scraping the sides and bottom after each addition. Use a wire whisk for the last few additions to avoid overmixing.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake in the preheated oven for about 40-45 minutes or until the top is set and slightly springy, with a toothpick coming out clean or with a few moist crumbs.
  10. Cool the cake in the pan.
