  • Total Time: 30 minutes
  • Yield: 1 tart 1x

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup powdered sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • ¼ teaspoon salt
  • 1 cup white chocolate, chopped
  • 2 cups heavy whipping cream
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • ¼ cup granulated sugar (for meringue)
  • fresh berries, for garnish (optional)
  • mint leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, cocoa powder, powdered sugar, softened butter, egg, and salt. Blend until a dough forms.
  3. Press the dough evenly into a 9-inch tart pan, ensuring it covers the bottom and sides. Prick the bottom with a fork to prevent bubbling.
  4. Bake in the preheated oven for 20 minutes or until set. Remove from the oven and let it cool completely.
  5. In a heatproof bowl, melt the chopped white chocolate over a double boiler or microwave until smooth. Allow it to cool slightly.
  6. In a large mixing bowl, whip the heavy cream with ¼ cup granulated sugar and vanilla extract until soft peaks form.
  7. Gently fold the melted white chocolate into the whipped cream until combined.
  8. In another bowl, beat the egg whites until they form soft peaks. Gradually add ¼ cup granulated sugar and continue to beat until stiff peaks form.
  9. Carefully fold the meringue into the white chocolate mixture in thirds until fully incorporated.
  10. Spoon the mousse into the cooled tart shell, smoothing the top.
  11. Cover the tart with plastic wrap and chill in the refrigerator for at least 2 hours or overnight.
  12. Before serving, garnish the tart with fresh berries and mint leaves for a vibrant touch.
