- 4–8 ounces fresh mushrooms or 4 ounce can (optional)
- 1 tablespoon butter if using mushrooms
- ¼ – ½ cup milk or ale, divided
- 1 teaspoon dry mustard or 1 tablespoon good prepared mustard
- 1 teaspoon worcestershire sauce
- 8 ounces sharp cheddar grated
- 6 ounces tuna drained (1 can)
- 4 slices bread ideally whole grain
Instructions
- If using fresh mushrooms, slice and sauté until golden, then set aside. For canned mushrooms, sauté them too for more flavor.
- In a medium saucepan, heat ¼ cup milk until steaming.
- Add dry mustard and Worcestershire sauce, then stir in the grated cheddar a handful at a time, mixing well in between.
- Incorporate the drained tuna and sauted mushrooms (if using) into the mixture.
- To adjust consistency, add more milk or ale a tablespoon at a time as it heats up.
- Toast 4 slices of sandwich-sized or artisan bread. Spread the tuna rarebit mixture evenly on top and serve immediately.
