Ingredients

  • 2 slices whole-grain bread or bread of choice
  • Mayo light or regular
  • 1 medium carrot peeled, grated using a box grater (~1/2 packed cup)
  • 1/2 ripe, large avocado
  • 1/8 teaspoon garlic powder
  • 1 teaspoon lemon juice optional
  • 1/2 cup gently packed baby spinach or similar greens
  • 1 small persian/salad cucumber thinly sliced lengthwise
  • 1/2 ripe tomato sliced into rounds (23 slices)
  • 2 small cooked beets in the produce section or canned
  • Salt and pepper
  • 1/4 teaspoon dijon-style mustard
  • 1/2 tablespoon apple cider vinegar
  • 1/2 tablespoon honey
  • 1 tablespoon olive oil
  • 1/8 teaspoon garlic powder

Instructions

  1. Combine all dressing ingredients in a small jar, seal, and shake until well-mixed.
  2. Place grated carrots in a bowl, add half of the dressing, and toss. Let sit for 1–2 minutes.
  3. In a separate bowl, add avocado, a squeeze of lemon, salt, pepper, and garlic powder; mash until smooth.
  4. Toast the bread and allow it to cool slightly before spreading mayo on both slices.
  5. Spread the mashed avocado on both bread slices. Layer cucumbers, tomatoes, a sprinkle of salt and pepper on the bottom slice, then add beet slices and dressed carrots.
  6. In the carrot bowl, add spinach with the remaining dressing, toss well, then pile on the sandwich.
  7. Top with the second bread slice, press gently, and slice in half. Serve immediately!
