  • 16 ounces pizza dough, store bought or homemade, at room temperature
  • ½ tablespoon olive oil
  • ¾ cup pizza sauce
  • ½ teaspoon dried italian seasoning, or basil
  • ½ teaspoon garlic powder
  • 1 cup loosely packed baby spinach, finely chopped after measuring
  • ½ cup finely chopped bell pepper
  • â…“ cup finely grated carrots, loosely packed
  • 20 pepperoni slices, or to taste, omit for vegetarian option
  • 1½ cups shredded mozzarella cheese, divided
  • ¼ cup grated parmesan cheese
  • any other pizza toppings your family enjoys

Instructions

  1. Preheat your oven to 400℉ and line a standard 12-hole muffin tin.
  2. Lightly flour a large cutting board or surface and roll out the pizza dough into an 11 x 16 rectangle.
  3. Brush the olive oil over the surface of the pizza dough to prevent sogginess.
  4. Spread the pizza sauce over the oiled dough, then sprinkle with Italian seasoning and garlic powder.
  5. Distribute the chopped spinach, grated carrots, bell peppers, and pepperoni (if using) evenly over the sauce, and top with 1 cup of mozzarella and all parmesan cheese.
  6. Starting from one of the long sides, carefully roll the dough into a tight log.
  7. With the roll seam-side down, cut the log into 12 equal pieces using a serrated knife.
  8. Place each slice into the lined muffin tin and sprinkle with the remaining ½ cup of mozzarella cheese.
  9. Bake for 18-20 minutes until golden brown and the cheese is melted.
  10. Let cool in the pan for 5 minutes before transferring to a cooling rack. Enjoy warm or store in an airtight container.
