Ingredients
- 4 tablespoons chia seeds
- 1 cup oat milk
- 1/2 cup vegan butter melted
- 1 cup all-purpose flour
- 3/4 cup cocoa powder
- 1 cup brown sugar
- 1 cup sugar
- 1 1/2 tablespoons vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 1/4 cups non-dairy chocolate chips
Instructions
- Combine chia seeds and oat milk in a small bowl. Stir and set aside.
- Preheat the oven to 350°F and line a 9×13 pan with parchment paper.
- In a medium bowl, mix together flour, cocoa powder, salt, and baking powder. Set aside.
- Melt vegan butter on the stove or microwave until fully melted.
- Using a mixer, blend melted butter with both sugars. Add chia mixture and vanilla extract, mixing well.
- Fold the dry flour mixture into the wet ingredients until just combined.
- Incorporate 1 cup of chocolate chips into the batter. Pour into the prepared pan and smooth it out. Sprinkle the remaining chocolate chips on top.
- Bake for 37-42 minutes, until edges are done but the center appears slightly underdone. Allow to cool on a rack for 15-30 minutes, then remove from the pan. Let rest before cutting.
