- 1 ½ cups (126 g) graham cracker crumbs

- ¾ cup (111 g) fresh blueberries
- ¾ cup (124.5 g) fresh strawberries, washed, patted dry, chopped
- ½ cup (61.5 g) fresh raspberries, whole or gently halved
- ¾ cup (94 g) all-purpose flour
- ¼ cup (50 g) light brown sugar, packed
- ¼ teaspoon kosher salt
- 5 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×9-inch baking dish with parchment paper, making sure it extends up the sides for easy removal later.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well mixed.
- Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
- In a separate large bowl, beat the cream cheese until smooth and creamy using an electric mixer.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the granulated sugar, lemon juice, vanilla extract, and kosher salt until combined.
- Gently fold in the fresh blueberries, strawberries, and raspberries.
- In another bowl, combine the flour, brown sugar, and kosher salt.
- Gradually mix the flour mixture into the cream cheese mixture until just combined.
- Spread the berry cheesecake mixture evenly over the prepared crust in the baking dish.
- Bake for approximately 175 minutes or until set and lightly golden on top.
- Allow to cool completely in the dish on a wire rack before slicing into bars.
