  • 1 large egg, beaten

  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 2 tablespoons red curry paste
  • 1 (13.5 ounce) can coconut milk (about 1.5 cups)
  • 1 tablespoon fish sauce
  • 1 lime, juiced and zested
  • ½ cup fresh basil leaves (or to taste)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a bowl, combine turkey, onions, garlic, ginger, curry paste, fish sauce, breadcrumbs, egg, and salt. Let rest for 20 minutes.
  • Shape into meatballs and place on a baking sheet.
  • Bake meatballs for 18-20 minutes until cooked through.
