- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- 2 boneless, skinless chicken breasts, halved
- 2 Tablespoons oil
- 2 Tablespoons butter
- 2 cups sliced button / baby bella mushrooms
- ½ cup sliced yellow onion
- 3 garlic cloves, minced
- ¼ cup low-sodium chicken broth
- 1 cup shredded Monterey Jack cheese
- 1 Tablespoon chopped fresh parsley (optional)
Instructions
- In a small bowl, mix salt, black pepper, onion powder, garlic powder, Italian seasoning, and paprika. Season both sides of the halved chicken breasts with this mixture and set aside.
- In a large skillet over medium heat, add 1 Tablespoon of oil, 2 Tablespoons of butter, mushrooms, yellow onion, and a pinch of salt and pepper.
- Cook the mixture for 7-8 minutes until the mushrooms are tender.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the seasoned chicken breasts to the skillet and cook for about 6-8 minutes.
- Pour in the remaining oil and reduce the heat to low-medium.
- Flip the chicken and continue cooking for another 3-4 minutes until fully cooked with an internal temperature of 165°F.
- Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom.
- Spoon some sauce, mushrooms, and onions over the chicken.
- Evenly top the chicken breasts with shredded Monterey Jack cheese.
- Spoon additional sauce, mushrooms, and onions over the chicken again.
- Cover the skillet with a lid and turn off the heat to allow the cheese to melt.
- If desired, sprinkle with fresh parsley before serving.
