  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 boneless, skinless chicken breasts, halved
  • 2 Tablespoons oil
  • 2 Tablespoons butter
  • 2 cups sliced button / baby bella mushrooms
  • ½ cup sliced yellow onion
  • 3 garlic cloves, minced
  • ¼ cup low-sodium chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 1 Tablespoon chopped fresh parsley (optional)

Instructions

  1. In a small bowl, mix salt, black pepper, onion powder, garlic powder, Italian seasoning, and paprika. Season both sides of the halved chicken breasts with this mixture and set aside.
  2. In a large skillet over medium heat, add 1 Tablespoon of oil, 2 Tablespoons of butter, mushrooms, yellow onion, and a pinch of salt and pepper.
  3. Cook the mixture for 7-8 minutes until the mushrooms are tender.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Add the seasoned chicken breasts to the skillet and cook for about 6-8 minutes.
  6. Pour in the remaining oil and reduce the heat to low-medium.
  7. Flip the chicken and continue cooking for another 3-4 minutes until fully cooked with an internal temperature of 165°F.
  8. Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom.
  9. Spoon some sauce, mushrooms, and onions over the chicken.
  10. Evenly top the chicken breasts with shredded Monterey Jack cheese.
  11. Spoon additional sauce, mushrooms, and onions over the chicken again.
  12. Cover the skillet with a lid and turn off the heat to allow the cheese to melt.
  13. If desired, sprinkle with fresh parsley before serving.
