Ingredients

  • pounds 80/20 ground beef
  • 1 large red bell pepper, diced
  • half of a medium yellow onion, diced
  • 2 large cloves garlic, minced
  • 1 package (1 to 1.25 ounces) your favorite taco seasoning mix
  • 1 cup black beans, rinsed and drained
  • 1½ cups fresh/raw or frozen corn kernels
  • 1 can (2.25 ounces) sliced black olives, drained, divided
  • 1 can (10 ounces) petite diced tomatoes with green chilies
  • 1 can (14.5 ounces) petite diced tomatoes
  • salt & pepper to taste
  • 10 ounces shredded mexican cheese blend, divided
  • 1 package (24 to 28 ounces) frozen tater tots
  • ½ teaspoon garlic powder
  • ¼ teaspoon morton kosher salt
  • chopped cilantro, chopped green onions, sliced black olives, taco sauce, sour cream, avocado or guacamole

Instructions

  1. Preheat the oven to 375°F and lightly spray a 9" x 13" baking dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook the ground beef, red pepper, and onion, breaking up the beef for about 10 minutes. Drain excess fat and add garlic, cooking for an additional minute.
  3. Mix in the taco seasoning, black beans, corn, and most black olives into the beef mixture, along with both types of diced tomatoes.
  4. Increase heat to medium-high and simmer for 5 minutes until bubbling and juices thicken. Adjust seasoning with salt and pepper as needed.
  5. Remove from heat, fold in 8 ounces of shredded cheese, and transfer the mixture to the prepared baking dish, spreading it evenly.
  6. Top with tater tots, leaving a 1" border of the beef mixture visible. Sprinkle garlic powder and salt over the tater tots.
  7. Bake for 35 minutes or until heated through. Turn on the broiler to brown the tater tots, about 3-5 minutes.
  8. Take out of the oven and sprinkle the remaining cheese on top of tater tots; broil until melted and bubbly, around 1 minute.
  9. Garnish with green onions, cilantro, and reserved black olives. Serve with taco condiments like sour cream, taco sauce, avocado, or guacamole.

Notes
