- 1 pound ground beef, or ground turkey
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 oz taco seasoning
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 15 oz tomato sauce
- 15 oz black beans, drained and rinsed
- 10 oz diced tomatoes with green chilies
- 10 oz enchilada sauce
- 1 cup corn kernels
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add ground beef (or turkey) and chopped onion; cook until the meat is browned and the onion is softened.
- Drain excess grease, then add minced garlic and cook for about 1 minute until fragrant.
- Stir in taco seasoning and flour; cook for about 2 minutes until no white streaks remain from the flour.
- Pour in chicken broth, tomato sauce, diced tomatoes, enchilada sauce, black beans, and corn; bring to a simmer.
- Simmer for 20 minutes, stirring occasionally.
- Serve topped with your favorite taco toppings.
