- 2 lbs chicken thighs or drumsticks
- 3 cloves garlic (minced)
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 1/3 cup prunes (pitted)
- 1/4 cup green olives (pitted)
- 2 tbsp capers
- 2 tbsp honey or brown sugar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley (chopped)
Instructions
- In a large bowl, combine the chicken with garlic, olive oil, lemon juice, oregano, salt, and black pepper.
- Add prunes, olives, and capers. Mix well to thoroughly coat the chicken.
- Cover the bowl and marinate the chicken in the refrigerator for at least 2 hours or overnight.
- Preheat the oven to 375°F (190°C).
- Transfer the marinated chicken to a baking dish, spreading it in a single layer.
- Drizzle honey or sprinkle brown sugar over the chicken pieces.
- Bake for 40–50 minutes, or until the chicken is golden brown and fully cooked.
- Before serving, spoon some sauce over the chicken.
- Garnish with fresh parsley and serve warm.
