  • 3 cloves garlic (minced)
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1/3 cup prunes (pitted)
  • 1/4 cup green olives (pitted)
  • 2 tbsp capers
  • 2 tbsp honey or brown sugar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a large bowl, combine the chicken with garlic, olive oil, lemon juice, oregano, salt, and black pepper.
  2. Add prunes, olives, and capers. Mix well to thoroughly coat the chicken.
  3. Cover the bowl and marinate the chicken in the refrigerator for at least 2 hours or overnight.
  4. Preheat the oven to 375°F (190°C).
  5. Transfer the marinated chicken to a baking dish, spreading it in a single layer.
  6. Drizzle honey or sprinkle brown sugar over the chicken pieces.
  7. Bake for 40–50 minutes, or until the chicken is golden brown and fully cooked.
  8. Before serving, spoon some sauce over the chicken.
  9. Garnish with fresh parsley and serve warm.
