  • 4 large bell peppers, tops cut and seeds removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 2 tablespoons tomato paste
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon paprika
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. Prepare the bell peppers by cutting off their tops and removing the seeds.
  3. Blanch the peppers in boiling water for 3–4 minutes, then drain and set aside.
  4. In a skillet, heat olive oil over medium heat and cook the onion until soft.
  5. Add garlic and cook for an additional minute.
  6. Incorporate the ground beef, browning it well.
  7. Stir in the diced tomatoes, tomato paste, italian seasoning, paprika, salt, and pepper; let simmer.
  8. Fold in the cooked rice until the mixture is well combined.
  9. Spoon the filling into each bell pepper, packing gently.
  10. Place the filled peppers upright in a baking dish; trim the bottoms if needed for stability.
  11. Cover with foil and bake for 25 minutes, then remove the foil, add mozzarella, and bake for another 10–15 minutes until cheese is golden.
  12. Garnish with fresh parsley before serving.
