Instructions
- Combine cottage cheese, maple syrup, vanilla extract, and ½ cup of chopped strawberries in a high-powered blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.
- Fold in the remaining chopped strawberries and crushed graham crackers until well mixed.
- Transfer the mixture back to the cottage cheese container or a loaf pan. Freeze for about 2-3 hours, or until it reaches a scoopable consistency.
- Allow the ice cream to sit at room temperature for 5–10 minutes before scooping for optimal texture.
- Scoop into bowls using an ice cream scoop. Top with additional graham crackers and/or strawberries if desired, then enjoy!
