- 1 pint fresh strawberries (or 1 cup crushed fresh strawberries)
- 15.25 ounce box French vanilla cake mix
- 3 ounce box strawberry gelatin mix
- 4 large eggs
- 1 cup vegetable oil
- ¼ cup water
- ½ block (4 ounces) cream cheese, softened to room temperature
- â…“ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 Tablespoon milk (more if needed to get desired texture)
Instructions
- Preheat your oven to 350°F. Prepare a 9×13-inch baking dish by spraying it with nonstick cooking spray.
- Rinse the strawberries, then gently dry them and remove the stems. Dice them into small pieces.
- Place the diced strawberries in a large Ziploc bag and crush them using a rolling pin or a heavy object. Set this aside.
- In a large bowl, mix together the French vanilla cake mix and strawberry gelatin mix until well combined.
- Add in the eggs, vegetable oil, and water, then mix until smooth.
- Gently fold in 1 cup of the crushed strawberries by hand into the batter.
- Pour the batter into the prepared baking dish.
- Bake for 30-33 minutes on the middle rack of your oven. Check for doneness by inserting a toothpick; if it comes out clean, the cake is ready.
- Remove the cake from the oven and let it cool completely before frosting.
