  • 500 g potato gnocchi
  • 2 tablespoons olive oil
  • 2 cups mushrooms, sliced
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a pot of salted water to a boil.
  2. Cook the gnocchi according to the package instructions. They are ready when they float to the surface. Gently drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook undisturbed for a few minutes until they are golden. Stir occasionally until tender.
  4. Add minced garlic and cook for about one minute until fragrant.
  5. Toss in fresh spinach and cook until wilted.
  6. Pour in heavy cream and stir gently, letting it simmer for a few minutes until it thickens. Stir in Parmesan cheese, salt, pepper, thyme, and red pepper flakes if desired.
  7. Add the cooked gnocchi to the skillet and gently fold everything together, coating the gnocchi in the sauce. Cook for another 2-3 minutes to blend the flavors.
  8. Serve warm, garnished with extra Parmesan if desired.
