- 1 Single pie crust, homemade or store-bought
- 4–5 strips bacon, diced
- ½ cup onion, small diced
- 2 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 4 large eggs
- 1 cup shredded Swiss cheese
- ½ cup shredded Parmesan cheese
- 1 cup half and half
Instructions
- Roll out the pie crust on a floured surface to about 13 inches wide and transfer it to a 9-inch pie dish. Trim the edges as needed, crimp them, then freeze for 30 minutes. Preheat the oven to 425°F.
- Place the frozen pie crust on a sheet pan and cover with greased foil, pressing it down so it’s flush with the crust. Fill with pie weights, dried beans, or rice.
- Bake for 10-15 minutes until the edges are dry and set. It's alright if some edges start to brown.
- Remove from the oven, and carefully lift the foil and weights out of the crust, setting them aside to cool.
- Reduce the oven temperature to 350°F.
