Ingredients

  • 1 Single pie crust, homemade or store-bought
  • 45 strips bacon, diced
  • ½ cup onion, small diced
  • 2 garlic cloves, minced
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup shredded Swiss cheese
  • ½ cup shredded Parmesan cheese
  • 1 cup half and half

Instructions

  1. Roll out the pie crust on a floured surface to about 13 inches wide and transfer it to a 9-inch pie dish. Trim the edges as needed, crimp them, then freeze for 30 minutes. Preheat the oven to 425°F.
  2. Place the frozen pie crust on a sheet pan and cover with greased foil, pressing it down so it’s flush with the crust. Fill with pie weights, dried beans, or rice.
  3. Bake for 10-15 minutes until the edges are dry and set. It's alright if some edges start to brown.
  4. Remove from the oven, and carefully lift the foil and weights out of the crust, setting them aside to cool.
  5. Reduce the oven temperature to 350°F.
