  • 200g (7oz) golden potatoes, cubed
  • 200g (7oz) of smoked sausage, sliced
  • 1 teaspoon of red chilli flakes
  • 1 teaspoon of paprika
  • 2 teaspoons of dried parsley
  • ½ teaspoon of garlic powder
  • 1 roasted red pepper, diced
  • 1 onion, diced
  • 6 large eggs
  • salt and pepper
  • 100g (3.5oz) cheddar, grated
  • olive oil spray

Instructions

  1. Boil the potatoes in water for 8-10 minutes until tender, then drain and set aside.
  2. Heat an ovenproof skillet over medium-high heat and spray with olive oil. Add sausage and onion, frying until golden.
  3. Stir in paprika, chilli flakes, garlic powder, and dried parsley, cooking for a few more minutes until fragrant.
  4. Mix in the roasted red pepper and cooked potatoes, spreading them evenly in the pan.
  5. Reduce heat to medium, whisk eggs with half the cheddar, season, and pour over the sausage mixture. Sprinkle with remaining cheddar. Cook for about 3 minutes until edges start to set.
  6. Broil for an additional 3 minutes until the top is golden and the frittata is fully set.
  7. Slice and serve.
