  • 1/2 cup girls can grill pastrami brine
  • 5 1/4 cups water
  • 2 lbs pork belly, cubed
  • 1/4 cup girls can grill pastrami rub
  • 6 tbsp butter
  • 1/4 cup hot mustard
  • 2 tbsp honey

Instructions

  1. Prepare the brine by combining Girls Can Grill Pastrami Brine with water in a large pot. Heat over medium heat until dissolved, then let it cool.
  2. Place the pork belly in a meat prep bag and add the cooled brine. Seal the bag and refrigerate for 6 days, tossing occasionally.
  3. After brining, remove the pork belly and rinse under cold water.
  4. Season the pork belly with Girls Can Grill Pastrami Rub. Place on a rack over a rimmed sheet pan and refrigerate uncovered for 1 day to cure.
  5. Preheat your smoker to 225°F with indirect heat. Place the rack with pork belly in the smoker for 3 hours.
  6. Transfer the pork belly to an aluminum half pan. Add butter, hot mustard, and honey. Cover and cook for 45 minutes.
  7. Remove the foil and toss the pork belly to coat it evenly with butter, mustard, and honey.
  8. Cook uncovered for an additional 15 minutes to set the glaze.

Notes
