  • 1 15 lb brisket
  • 1 cup beer
  • ¼ cup apple cider vinegar
  • ¼ cup beef stock
  • 5 tbsp butter, melted
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp paprika
  • 2 tbsp chili powder
  • 2 tbsp kosher salt
  • 2 tbsp coarse ground black pepper
  • 1 tbsp brown sugar

Instructions

  1. Prepare the Traeger grill on the Smoke setting (Super Smoke for the Timberline model) with the lid open for 4-5 minutes to establish the fire.
  2. Set the grill temperature to 225 degrees F and preheat for 10 minutes with the lid closed.
  3. In a small bowl, combine garlic powder, onion powder, paprika, chili powder, kosher salt, black pepper, and brown sugar.
  4. Rub the seasoning mix onto the brisket on all sides.
  5. Place the brisket, fat side down, on the grill grate.
  6. Cook the brisket until it reaches an internal temperature of 160 degrees F, approximately 3-4 hours.
  7. While the brisket cooks, mix together beer, apple cider vinegar, beef stock, and melted butter to create a baste.
  8. Once the brisket hits 160 degrees F, remove it from the grill and double wrap it in aluminum foil. Pour the baste around the brisket inside the foil.
  9. Return the wrapped brisket to the grill and cook until the internal temperature reaches 204 degrees F, which will take about another 3-4 hours.
  10. After cooking, take the brisket out of the grill, unwrap it from the foil, and let it rest for 15 minutes.
  11. Slice against the grain and serve, enjoying the smoky goodness!
