- 1 pound ground beef (80 percent lean)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 burger buns
- 4 slices cheddar cheese
- 1 tablespoon butter
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 2 tablespoons dill pickles (finely chopped)
- 1 teaspoon pickle juice
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ cup shredded lettuce
- ½ small onion (thinly sliced)
- 8 pickle slices
Instructions
- In a small bowl, mix together mayonnaise, ketchup, yellow mustard, dill pickles, pickle juice, garlic powder, and paprika. Stir and refrigerate until ready.
- Divide ground beef into 8 equal pieces, rolling them into loose balls without overworking.
- Heat a cast iron skillet or griddle over high heat and place 2-3 beef balls onto it. Smash each ball with a spatula to form thin patties. Season with salt and pepper. Cook for about 2 minutes until crispy around the edges.
- Flip the patties, adding a slice of cheddar cheese on one patty of each pair. Cook for another minute. Stack a plain patty on each cheese topped one to form double burgers.
- Spread butter on the burger buns and toast them in the pan until golden.
- Spread the special sauce generously on both sides of the buns. Add the burger patties, top with shredded lettuce, sliced onion, and pickles. Close the burgers and serve.
