- 1 pound lean ground beef
- kosher salt and pepper
- 2 tablespoons unsalted butter
- 6 slices sharp white cheddar cheese
- 10 ounces butter lettuce
- 1 ½ cups cherry tomatoes, halved
- ½ cup chopped pickles
- dill pickle vinaigrette, for topping
Instructions
- Heat the butter in a large cast iron skillet over medium heat.
- Season the ground beef with salt and pepper, and divide it into 4 pieces.
- When the skillet is hot, press each piece of ground beef into the skillet, using a spatula or jar bottom to smash it down.
- Cook for 5 to 6 minutes, then flip and smash the other side for golden edges.
- Place a slice of cheddar on each burger and let it melt before removing them from the skillet.
- In a bowl, toss the lettuce with salt and pepper, then add the tomatoes and pickles.
- Tear or cut the smash burgers into pieces and add them to the salad.
- Drizzle with the dill pickle vinaigrette and serve.

For extra flavor, add some minced garlic to the butter while it’s melting.
