  • 1 tablespoon fresh lemon juice plus lemon slices for top
  • 1 tablespoon fresh orange juice plus orange slices for top
  • 2 teaspoons chopped fresh dill
  • 1/4 teaspoon sea salt
  • 1 shallot, peeled and thinly sliced (optional)

Instructions

  1. Preheat the oven to 250 degrees F. Place the salmon on a rimmed baking sheet and dry it with a paper towel. Season generously with salt and pepper.
  2. In a small bowl, mix olive oil, whole grain dijon mustard, minced garlic, lemon juice, orange juice, dill, and salt together.
  3. Brush the citrus marinade evenly over the salmon and sprinkle with sliced shallots, if using. Top with lemon and orange slices, then drizzle with a little extra olive oil.
  4. Roast the salmon for 20-25 minutes until it reaches an internal temperature of 135 degrees for medium doneness. For medium-well, cook to 140 degrees. Let the salmon rest for 5 minutes before serving.
