- 4 tablespoons olive oil plus more for drizzling
- 2 tablespoons whole grain dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice plus lemon slices for top
- 1 tablespoon fresh orange juice plus orange slices for top
- 2 teaspoons chopped fresh dill
- 1/4 teaspoon sea salt
- 1 shallot, peeled and thinly sliced (optional)
Instructions
- Preheat the oven to 250 degrees F. Place the salmon on a rimmed baking sheet and dry it with a paper towel. Season generously with salt and pepper.
- In a small bowl, mix olive oil, whole grain dijon mustard, minced garlic, lemon juice, orange juice, dill, and salt together.
- Brush the citrus marinade evenly over the salmon and sprinkle with sliced shallots, if using. Top with lemon and orange slices, then drizzle with a little extra olive oil.
- Roast the salmon for 20-25 minutes until it reaches an internal temperature of 135 degrees for medium doneness. For medium-well, cook to 140 degrees. Let the salmon rest for 5 minutes before serving.
