- 600g (21oz) of boneless skinless chicken breast, diced
- 1 tablespoon of butter
- 2 tablespoons of mild curry powder
- 2 teaspoons of garam masala
- 1 teaspoon of salt
- 1 teaspoon of hot chilli powder
- 2 teaspoons of sugar
- 1 onion, finely chopped
- 3 cloves of garlic, crushed
- 1 tablespoon of fresh ginger root, grated
- 400g (14oz) can of chopped tomatoes in rich tomato sauce (use a good brand)
- 200g (7oz) of fresh baby spinach
Instructions
- Place the diced chicken in the slow cooker and add butter, curry powder, garam masala, salt, hot chilli powder, and sugar. Mix well until chicken is coated.
- Add the chopped onion, crushed garlic, grated ginger, and the can of tomatoes to the slow cooker.
- Set the slow cooker to low and cook for 4 hours.
- Once cooked, stir in the fresh baby spinach until wilted.
- Taste and adjust seasoning with salt and black pepper as needed.
- Serve hot and enjoy your delicious meal.
