  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion (sliced)
  • 6 cloves garlic (minced)
  • 2 tablespoons fresh ginger (grated)
  • ½ cup soy sauce (low sodium)
  • ⅓ cup brown sugar
  • ¼ cup rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon toasted sesame oil
  • 2 cups beef broth (low sodium)
  • 1 star anise pod
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 3 cups cooked rice (warm)
  • 2 green onions (sliced)
  • 1 tablespoon sesame seeds

Instructions

  1. Pat the beef chunks dry and season with salt and pepper.
  2. Heat vegetable oil in a large skillet over high heat and sear the beef on all sides until browned. Transfer to the slow cooker.
  3. Add sliced onion, minced garlic, and grated ginger to the slow cooker with the beef.
  4. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, sesame oil, and beef broth. Pour over beef and add star anise and red pepper flakes.
  5. Cover and cook on low for 8 hours or on high for 4 to 5 hours until beef is tender and falling apart.
  6. Remove the star anise. Stir cornstarch into water until smooth, then stir into the slow cooker. Cover and cook on high for another 15 to 20 minutes until the sauce thickens.
  7. Serve the beef and sauce over warm rice, topped with sliced green onions and sesame seeds.
