  • ¼ tsp coarse sea salt
  • ¼ tsp ground white pepper
  • 2 tsp potato starch or tapioca starch
  • 1 tbsp toasted sesame oil
  • 0.32 oz fresh ginger very finely minced (about 1¼ tbsp; see notes)
  • 6 oz celery stalks thinly sliced into small rounds
  • 8 oz water chestnuts (1 can) (4.9 oz drained weight)
  • 1 tbsp neutral-flavored oil such as avocado oil
  • â…› tsp coarse sea salt
  • 1 tbsp taiwanese michiu clear rice cooking wine, shaoxing wine, or chicken stock
  • 1 large head iceberg lettuce
  • 1 whole red apple peeled, cored, and diced into small pieces
  • 2 scallions thinly sliced into small rounds
  • wonton strips gluten-free wonton chips, plain croutons, or another lightly salted crispy topping

Instructions

  1. Pat the shrimp dry and dice into small chunks. Season with salt, white pepper, potato starch, and sesame oil in a bowl. Cover and refrigerate.
  2. Very finely mince the ginger. Thinly slice celery and chop the drained water chestnuts. Keep ingredients separate.
  3. Add oil to a sauté pan over medium heat and warm the pan.
  4. Add shrimp to the pan evenly and sauté until just starting to turn pink, about 1 minute.
  5. Add ginger and celery, season with salt, and sauté for another 30 seconds.
  6. Stir in the chopped water chestnuts and sauté briefly, ensuring a steady sizzle.
  7. Deglaze the pan with michiu, Shaoxing wine, or chicken stock, then turn off the heat.
  8. Transfer the shrimp mixture to a large bowl and cool to room temperature.
  9. Separate iceberg lettuce leaves and trim floppy edges, keeping the firmer parts for cups.
  10. Rinse, drain, and pat lettuce cups dry, then arrange on a serving plate.
  11. Dice the apple, slice scallions, and prepare crispy toppings in separate bowls.
  12. Allow guests to assemble their cups with shrimp mixture, apple, scallions, and crispy topping, serving immediately.
