Ingredients
- 10 ounces broccoli florets
- 2 teaspoons avocado oil
- ¼ teaspoon garlic powder
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons honey
- 1 cup finely shredded carrots
- 1 cup packed baby spinach
- 1 teaspoon fresh grated ginger
- ½ teaspoon salt
- 3 cloves garlic
- ½ cup panko breadcrumbs
- 1 pound ground chicken
- sliced fresh green onions for garnish
- ¼ cup light mayo
- ½ cup plain greek yogurt
- 1–2 teaspoons sriracha
- ¼ teaspoon garlic powder
Instructions
- Preheat the oven to 400℉ and line a sheet pan with parchment paper or spray lightly with oil.
- Toss broccoli florets in avocado oil and garlic powder, then arrange them in a single layer around the edges of the sheet pan, leaving space for the meatballs in the center.
- In a small bowl, combine soy sauce, rice wine vinegar, and honey; set aside.
- In a large bowl, mix together the shredded carrots, chopped spinach, grated ginger, minced garlic, salt, and panko breadcrumbs until well combined.
- Add ground chicken to the vegetable mixture along with 2 tablespoons of the soy sauce mixture. Mix well until everything is incorporated.
- Form the mixture into 20 golf-ball-sized meatballs and place them in the center of the baking sheet. Drizzle the remaining soy sauce mixture over the meatballs and a little over the broccoli.
- Bake for 15-18 minutes or until the meatballs reach an internal temperature of 165℉ and the broccoli is golden and crispy.
- Meanwhile, prepare the sauce.
