These Seafood Salad Deviled Eggs are packed with flavor and easy to make. With shrimp, crab, and a creamy filling, they are ideal for a quick snack or party appetizer.

Ingredients

  • 12 oz shrimp, raw, peeled, deveined
  • 1 tbsp olive oil
  • 1 tsp girls can grill chicken rub
  • 6 hard boiled eggs
  • 1/2 cup mayo
  • 2 tsp yellow mustard
  • 1/4 cup celery, minced
  • 1/4 cup shallot, minced
  • 1 cup cooked crab meat, real or imitation
  • salt and pepper, to taste
  • paprika, for garnish

Instructions

  1. Season shrimp with olive oil and chicken rub.
  2. Heat the grill to medium-high. Grill shrimp for a few minutes per side until cooked. Let cool, then chop into small pieces, reserving 12 pieces for garnish.
  3. Halve the boiled eggs and remove the yolks into a bowl. Mash the yolks with a fork.
  4. Mix in mayo and mustard until the mixture is smooth. Add minced celery and shallot, and gently fold in chopped shrimp and crab meat. Season with salt and pepper to taste.
  5. Spoon the seafood salad mixture into the egg halves. Garnish with a dusting of paprika and add diced green onions or chives if desired.
