  • 400 g (14 oz) store-bought puff pastry (1 sheet)
  • 23 tbsp homemade basil pesto (or store-bought)
  • 1 cup (100 g) shredded mozzarella cheese
  • ⅓ cup (20 g) finely grated parmesan cheese

Instructions

  1. Defrost the puff pastry by placing it in the fridge overnight or thaw it at room temperature for 30-40 minutes. Ensure it doesn't get too soft.
  2. Lightly flour a parchment-lined surface and unroll the puff pastry with the longer side facing you.
  3. Spread the basil pesto evenly over the puff pastry and sprinkle with mozzarella and parmesan cheese.
  4. Fold each long side of the pastry inward about ¼ of the way, then fold them inward again to meet in the middle.
  5. Gently press down with a rolling pin to help it hold its shape, then fold one side over the other to form a log.
  6. Refrigerate the pastry log for at least 30 minutes on a parchment-lined baking sheet covered with plastic wrap.
  7. Preheat the oven to 200°C (400°F) and prepare a baking sheet with parchment paper.
  8. Slice the chilled pastry log into 1 cm (0.4 in) thick pieces and place them cut-side down on the baking sheet, leaving space between each piece.
  9. Bake the Palmiers in the oven until golden and puffed, checking around the 10-minute mark to avoid overbaking.
  10. Transfer the baked Palmiers to a wire rack to cool slightly; they will crisp up more as they cool.
