Instructions
- Bring water or vegetable broth to a gentle boil.
- Stir in the rolled oats, then reduce heat to a simmer and cook for about 5 minutes, stirring occasionally.
- While the oats are cooking, halve the avocado and scoop it into a bowl. Mash it lightly, leaving some chunks for texture.
- Once the oats are cooked, remove from heat and stir in olive oil, salt, and pepper. Gently fold in the mashed avocado.
- If using an egg, cook it separately to your liking and place it on top of the oatmeal before serving.
- Garnish with green onions, fresh herbs, and a sprinkle of red pepper flakes if desired.
