  • 12 oz smoked sausage
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cup uncooked long grain white rice
  • 2 1/2 cup chicken broth
  • 10 oz rotel tomatoes
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat and add the olive oil, swirling to coat the pan.
  2. Add the smoked sausage and diced onion to the skillet. Cook for 5-7 minutes until the onions are soft and the sausage is beginning to brown.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the uncooked rice, chicken broth, rotel tomatoes, paprika, and cayenne pepper to the skillet. Bring the mixture to a boil. Cover the skillet and reduce the heat to simmer.
  5. Cook for about 20 minutes, or until all the liquid is absorbed and the rice is fully cooked.
  6. Season with salt and pepper to taste before serving.
