  • ½ tablespoon all-purpose flour
  • ¾ cup roughly chopped roasted red peppers
  • ¼ cup chopped scallions
  • â…“ cup cooked and crumbled sausage
  • ¾ cup shredded cheddar cheese
  • 5 large eggs
  • 1¼ cup half and half
  • ½ teaspoon kosher salt
  • 1/4 teaspoon pepper
  • ½ teaspoon ground mustard
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Fit the pie crust into a 9-inch glass pie plate and pierce it with a fork.
  3. Bake the crust for about 6 to 8 minutes or until it’s just beginning to brown, then remove and cool.
  4. Sprinkle the flour evenly over the bottom of the par-baked crust.
  5. In a bowl, mix the roasted red peppers, scallions, sausage, and cheddar cheese, then pour this mixture into the crust.
  6. In another bowl, whisk the eggs, half and half, salt, pepper, and parsley together.
  7. Pour the egg mixture over the filling in the crust.
  8. Bake for 50-55 minutes or until the quiche is set, then let it cool for 30 minutes before serving.
