  • 1/4 cup crumbled feta cheese
  • 1 1/2 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped dill

Instructions

  1. Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper or aluminum foil.
  2. Cut off the tops of the carrots and slice them diagonally into 1/2-inch-thick pieces for even cooking.
  3. On the prepared baking sheet, toss the carrots with olive oil, garlic powder (if using), salt, and black pepper until evenly coated, making sure they are in a single layer.
  4. Roast in the oven for 20 to 30 minutes, tossing halfway through, until the carrots are fork tender.
