  • 1 tbsp olive oil
  • 16 oz. lean ground beef
  • 1 large yellow onion diced
  • 3 stalks celery diced
  • 1 green bell pepper diced
  • 1 14.5-oz. can diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 2 tsp cajun seasoning
  • 1 tsp kosher salt
  • 2 tbsp fresh parsley chopped
  • 2 tsp minced garlic
  • 1 15-oz. can dark red kidney beans, drained
  • 1 cup uncooked white rice
  • 16 oz. andouille sausage or smoked sausage sliced
  • ¼ cup green onions sliced
  • {optional} hot sauce for serving

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet or Dutch oven, heat olive oil over medium heat. Once hot, add the ground beef and cook for 4-5 minutes until it begins to brown, stirring occasionally.
  3. Add the diced onions, celery, and bell pepper; cook for an additional 5-6 minutes until the onions start to soften.
  4. Stir in the diced tomatoes, chicken broth, Cajun seasoning, salt, parsley, and minced garlic. Allow to simmer for 10 minutes.
  5. Remove from heat and mix in the drained beans and uncooked rice.
  6. Spray a 9”x13” casserole dish with nonstick cooking spray and transfer the mixture from the Dutch oven into the dish.
  7. Layer half of the sliced sausage on top, cover the dish with foil, and bake for 60 minutes.
  8. After 60 minutes, remove the foil, stir the contents slightly, and layer the remaining sausage on top. Cover with foil again and bake for an additional 30 minutes.
  9. After baking, top with sliced green onions and serve with optional hot sauce.
