These Pumpkin Spice Cookies are a must-try for their irresistible flavor and simple preparation. Made with butter, sugar, and a hint of pumpkin spice, they are perfect for sharing during holidays or any occasion that calls for a touch of sweetness.

  • Total Time: 1 hour 10 minutes
  • Yield: 22 servings 1x

Ingredients

Scale
  • ¾ cup (170g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 2 cups (248g) all-purpose flour
  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ teaspoon salt
  • 2 cups (226g) powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • 3 tablespoons (45ml) heavy whipping cream

Instructions

  1. Preheat oven to 350°F. Line two cookie sheets with silpat liners or parchment paper.
  2. Cream softened butter and granulated sugar together in a mixing bowl until smooth. Beat in the egg and vanilla extract, then mix in the pumpkin pie spice, baking soda, cream of tartar, and salt. Gradually incorporate the flour.
  3. Using a cookie scoop, place 2 tablespoon-sized balls of dough onto the prepared cookie sheets.
  4. Bake in the preheated oven for 9-10 minutes, until the bottoms are just golden. Remove from the oven slightly before they turn golden for a soft and pillowy texture, as they will continue to cook while cooling.
  5. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack until completely cool.
  6. To make the frosting, combine butter in a bowl and beat until creamy. Mix in the salt, then gradually add powdered sugar until the mixture is crummy. Add in the vanilla, pumpkin spice, and heavy whipping cream, mixing until smooth. Adjust with more cream if needed for consistency before frosting the cookies.
  7. Store at room temperature covered loosely, allowing the frosting to semi-dry so the cookies become stackable.
