  • 1 teaspoon vanilla extract (5g)
  • 2 tablespoons granulated sugar (29g)
  • 1/2 teaspoon ground cinnamon (2g)

Instructions

  1. Preheat the oven to 375°F and line a 12-cup muffin pan with liners.
  2. In a medium bowl, combine the freshly milled soft white wheat flour, baking soda, baking powder, salt, and pumpkin pie spice; whisk until incorporated.
  3. In a large bowl, whisk together the vegetable oil, melted butter, eggs, pumpkin puree, milk, granulated sugar, brown sugar, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Allow the batter to rest for 10–15 minutes to let the flour hydrate.
  6. In a separate small bowl, mix the granulated sugar and ground cinnamon for topping.
  7. Distribute the batter evenly among the 12 muffin cups and sprinkle the cinnamon sugar on top of each muffin.
