- 2 boxes jiffy cornbread
- 3 large eggs
- 1 ⅓ cups milk
- ¼ cup butter, melted
- ⅓ cup honey
- 3 cup smoked pulled pork
- 1 ¼ cup barbecue sauce
- 2 tablespoon apple cider vinegar
- 2 cup shredded cheddar cheese
- ¼ cup sliced green onions
- ¼ cup pickled jalapenos
- ¼ cup red onion, diced
Instructions
- In a large bowl, mix jiffy mix, eggs, milk, melted butter, and honey until smooth.
- Preheat a waffle iron and spray it with non-cook spray.
- Spoon the batter onto the waffle iron and cook according to the manufacturer's directions, preferably on low heat.
- Continue this process until all the cornbread batter is used.
