- 8 sheets phyllo dough
- 3 tablespoons olive oil
- 2 tablespoons butter, melted
- 1/4 cup honey
- 1–2 teaspoons chili flakes (adjust to taste)
- 1 teaspoon sesame seeds (optional)
- fresh thyme leaves (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay out a sheet of phyllo dough and brush it with a mix of melted butter and olive oil. Keep unused sheets covered to prevent drying.
- Position a piece of feta near one edge of the phyllo sheet, fold the sides inward, and roll it up snugly. Repeat with remaining sheets and feta pieces, placing rolls seam-side down on the baking tray.
- Brush the tops lightly with more butter and olive oil to ensure a golden and crisp finish.
- Bake for 20–25 minutes until rolls are golden and crisp, releasing a delightful aroma as they cook.
- While baking, warm the honey gently and stir in chili flakes to create a flavorful glaze.
- Once the rolls are out of the oven, drizzle them generously with the chili honey and optionally sprinkle with sesame seeds and fresh thyme. Serve warm.
