  • 1 lb (2 medium) boneless skinless chicken breasts
  • kosher salt and pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsalted butter, divided
  • 2 tablespoons extra-virgin olive oil, divided
  • 1/2 cup finely-diced yellow onion
  • 11/2 cups dry orzo pasta
  • 3 medium cloves garlic, minced
  • 3/4 cup dry white wine
  • 3 cups chicken broth
  • juice and zest from 1 medium lemon
  • 2 tablespoons capers
  • 2 tablespoons minced fresh parsley

Instructions

  1. Cut the chicken breasts in half horizontally to create 4 cutlets. Pound each cutlet to about 1/2-inch thickness and season with salt and pepper. Dredge in flour, shaking off any excess.
  2. In a large skillet over medium-high heat, melt 1 tablespoon of butter with 1 tablespoon of olive oil. Add the chicken in a single layer and sear for 3-4 minutes. Flip and add the remaining tablespoon of butter, cooking until golden brown and cooked through, about 3-4 more minutes. Transfer to a cutting board and cube the chicken.
  3. In the same skillet, add the remaining tablespoon of olive oil, warming over medium heat. Add the onion and orzo, cooking for 3-4 minutes until the orzo is light golden and the onion is translucent. Stir in the garlic and cook for an additional minute until fragrant.
  4. Pour in the white wine and scrape any browned bits from the pan, allowing the wine to simmer for 2-3 minutes until reduced by half.
  5. Pour in the chicken broth, bring to a simmer, and reduce heat to medium-low. Cook the orzo uncovered for 8-10 minutes, stirring occasionally, until the orzo is tender and most liquid has evaporated.
  6. Toss the cubed chicken, lemon juice and zest, capers, and parsley into the orzo. Season with salt and pepper to taste and serve warm.

Notes
