- 1 cup rice, uncooked
- 1 small onion, diced
- 4 garlic cloves, minced
- 1 tablespoon olive oil
- 2 cups vegetable broth
- 1 teaspoon dried parsley
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon italian seasoning
- 16 ounce frozen mixed vegetables
- optional: top with sliced green onions and cilantro, if desired
Instructions
- Heat oil in a skillet, pot, or Dutch oven over medium heat.
- Add diced onions and sauté for 2-3 minutes until translucent.
- Add minced garlic and cook for an additional minute until fragrant.
- Add uncooked rice and lightly toast, stirring constantly for 1-2 minutes.
- Pour in the vegetable broth and add seasonings, then stir to combine.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat and cover to simmer for 12-15 minutes.
- Add frozen vegetables to the rice mixture, stir, and cover again.
- Cook for another 5 minutes.
- Remove from heat and let sit for a few minutes.
- Fluff with a fork and top with green onions and cilantro, if desired.
