  • 1 small yellow onion chopped
  • 2 cups fresh or frozen okra cut into half-inch rounds
  • 3 cloves garlic minced
  • 2 (14.5-ounce) cans fire-roasted diced tomatoes
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar
  • 1–2 pinches ground cayenne pepper
  • salt to taste
  • freshly ground black pepper to taste

Instructions

  1. In a large skillet, brown the chopped bacon over medium heat. Remove the bacon and drain it on paper towels, leaving the grease in the skillet.
  2. Add the chopped onion and okra to the skillet, cooking for about 8 minutes until lightly browned.
  3. Reduce heat to low, then stir in minced garlic. Cook for 1 minute while stirring.
  4. Stir in the fire-roasted diced tomatoes, brown sugar, apple cider vinegar, and ground cayenne pepper. Let simmer for 15-20 minutes.
  5. Season the dish with salt and freshly ground black pepper to taste.
