  • Total Time: 28 minutes
  • Yield: 22 cookies 1x

Ingredients

Scale
  • ½ cup butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup flour
  • 1½ cups rolled oats
  • 1½ cups rice krispies

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, taking about 3-4 minutes. Mix in the egg and vanilla extract until well combined.
  3. Stir in the cinnamon, baking powder, baking soda, and salt, mixing until incorporated.
  4. Gradually add the flour, using a large spoon or spatula to mix by hand. Add in the rolled oats and combine, then add the Rice Krispies, mixing by hand until evenly distributed.
  5. Scoop 3 tablespoons of dough for each cookie onto a baking sheet, spacing 9-12 cookies per sheet. Press the dough tightly into balls, flattening them slightly before baking for 8 minutes until just lightly browned at the edges. Allow to cool slightly before transferring to a wire rack.
