- ½ cup butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup flour
- 1½ cups rolled oats
- 1½ cups rice krispies
Instructions
- Preheat the oven to 350°F.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, taking about 3-4 minutes. Mix in the egg and vanilla extract until well combined.
- Stir in the cinnamon, baking powder, baking soda, and salt, mixing until incorporated.
- Gradually add the flour, using a large spoon or spatula to mix by hand. Add in the rolled oats and combine, then add the Rice Krispies, mixing by hand until evenly distributed.
- Scoop 3 tablespoons of dough for each cookie onto a baking sheet, spacing 9-12 cookies per sheet. Press the dough tightly into balls, flattening them slightly before baking for 8 minutes until just lightly browned at the edges. Allow to cool slightly before transferring to a wire rack.
