Monte Cristo Crepes combine savory ham and turkey with melty Swiss cheese, all wrapped in a delicate crepe. Perfect for a cozy dinner or brunch!

Ingredients

  • 1 cup milk
  • 1 cup water
  • 4 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup butter melted and slightly cooled
  • 12 slices Swiss cheese
  • 10 oz deli-sliced ham
  • 10 oz deli-sliced turkey
  • 1/4 cup raspberry jam
  • powdered sugar

Instructions

  1. Combine milk, water, and eggs in a blender and pulse to mix.
  2. Add flour and salt to the blender, then pour in the melted butter. Pulse until smooth and combine, then refrigerate for 30 minutes.
  3. Preheat the oven to 350ºF.
  4. Lightly butter a 10-inch nonstick skillet over medium heat.
  5. Pour about 1/4 cup of batter into the skillet, tilting to spread evenly into a thin crepe. Cook for about a minute, then flip and cook the other side for another minute. Transfer crepes to a plate.
  6. Repeat until all batter is used, lightly buttering the skillet again if necessary. You should make 12 crepes total.
  7. Place cheese pieces over one half of a crepe. Top with ham and turkey, then fold the crepe over, followed by folding it again into a triangle. Arrange on a baking sheet.
  8. Repeat with remaining crepes and fillings to make 12 filled crepes total.
  9. Bake in the preheated oven for about 10 minutes, or until cheese is melting.
  10. Drizzle with raspberry jam and dust with powdered sugar before serving.
