- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegetable shortening crisco*
- 3/4 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 cup buttermilk
- 8 ounces cream cheese softened
- 1/2 lime zested and juiced
- 1/2 cup powdered sugar
- 10 strawberries sliced
- 1 kiwi peeled and cut into quarter-circle slices
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup mandarin oranges
Instructions
- Prepare the cookie base by sifting together the flour, baking powder, baking soda, and salt in a large bowl.
- In a stand mixer, cream the vegetable shortening, sugar, egg, and vanilla until smooth. Incorporate half of the dry ingredients, then add the buttermilk. Mix in the remaining dry ingredients until just combined. Chill the dough for at least four hours or overnight.
- Preheat your oven to 300 degrees F after the dough has chilled.
- Roll out a quarter of the dough on a floured surface to about 1/4-inch thickness. Cut into 4-inch rounds and place on an ungreased baking sheet. Continue with the remaining dough. Bake for about 10 minutes until cookies begin to brown slightly. Let cool completely.
- In a medium bowl, mix the cream cheese, lime zest, lime juice, and powdered sugar until smooth.
- Spread about 1 tablespoon of the cream cheese mixture on each cooled cookie and top with fruit slices. Serve right away or chill for up to two hours.
