- 2¼ cups all-purpose flour (281 grams)
- 1 cup cocoa powder (90 grams)
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter (226 grams), softened
- 1 cup brown sugar (210 grams)
- 1 cup granulated sugar (200 grams)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup Mini Eggs (about 160–180 grams), plus more for topping
- 1 cup chocolate chips (180 grams)
Instructions
- In a large bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt.
- In another large bowl, cream together butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
- Add the eggs and vanilla extract to the butter mixture, mixing until combined.
- Gradually beat in the dry ingredients, ensuring no lumps remain by scraping the sides and bottom of the bowl.
- Chop half of the Mini Eggs, or crush them in a bag, and mix into the dough along with chocolate chips.
- Cover the bowl and refrigerate for at least 3 hours or up to 48 hours.
- Preheat the oven to 375℉ (190℃) and line baking sheets with parchment paper or silicone mats.
- Form the cookie dough into balls of about ¼ to ⅓ cup each, placing them at least 2½ inches apart on the sheets.
- Bake one sheet at a time for about 12-14 minutes, until the tops are just set.
- Remove from the oven and use a large circular cutter to shape the cookies into perfect rounds if desired.
- Optionally, press extra Mini Eggs into the tops of each cookie and let cool on the pan.
