Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup granulated sugar (for brûlée topping)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix thoroughly.
  3. Press 1 tablespoon of the crumb mixture into the bottom of each muffin liner for the crust.
  4. Bake the crusts for 5-7 minutes until set, then remove and cool slightly.
  5. In a large mixing bowl, beat the softened cream cheese with 1/2 cup sugar until smooth and creamy.
  6. Add vanilla extract, lemon zest, and sour cream to the cream cheese mixture, mixing well.
  7. Incorporate the eggs one at a time, mixing on low speed until just incorporated, avoiding overmixing.
  8. Divide the filling evenly among the crusts, filling each about three-quarters full.
  9. Bake for 20-25 minutes until the edges are set and the center is slightly jiggly.
  10. Allow to cool at room temperature before refrigerating for at least 2 hours, or overnight.
  11. Once chilled, sprinkle 1 teaspoon of granulated sugar on each cheesecake and caramelize using a kitchen torch or broil briefly in the oven.
